Steering around the farmed fish at Costco. Plus, first (maybe last) visit to Wegmans

HACKENSACK, N.J. -- Let me count the ways I love the wild-caught fish I find at Costco Wholesale.

The refrigerated cases in Teterboro and Wayne offer skinless-and-boneless fillets of Cod from Iceland, Flounder from the United States or Canada; Haddock, Silver Corvina from Suriname in South America, skin-on Ocean Perch and whole Snappers from Panama.

From time to time, I also see thick, wild-caught ahi-tuna steaks, fat fillets of wild halibut; and monkfish, which has the texture of lobster when cooked.

They're the best reasons to avoid the farmed fish you'll see nearby, especially the bargain-basement Farmed Tilapia from Colombia or the enormous slabs of artificially colored Farmed Atlantic Salmon raised with antibiotics and who knows what else.



FROM COLOMBIA TO COSTCO IN WAYNE: Fresh Farmed Tilapia ($4.99 a pound), also known as Saint Peter Fish, is called a "good alternative" by the Monterey Bay Aquarium Seafood Watch when the fillets come from Colombia, but Tilapia fillets from Peru and Ecuador are rated "best choice."
FROM NORWAY TO WAYNE: Costco Wholesale carries two types of Fresh Farmed Atlantic Salmon, including these artificially colored fillets from Norway, where they are raised without harmful antibiotics ($8.99 a pound). However, the best Farmed Atlantic Salmon comes from Aquaculture Stewardship Council (ASC) certified salmon farms, and the Costco label doesn't mention the council.
AT COSTCO IN WAYNE: Fresh, wild Flounder Fillets were $7.99 a pound. With no Sunday blue laws to worry about in Passaic County, I also picked up 7 bottles of Kirkland Signature red wine, including Pinot Noir, Cabernet Sauvignon, Zinfandel and Rioja Reserva.
FROM CANADA TO WAYNE: Fresh, wild Ocean Perch Fillets were $5.49 a pound on Sunday at the Costco Wholesale, 149 Route 23 north, in the Wayne Towne Center mall.
FROM SOUTH AMERICA TO WAYNE:  Fresh, wild Silver Corvina is an unusually meaty fish when cooked ($8.99 a pound).
FROM PANAMA TO TETERBORO: My wife bought fresh, whole wild-caught Snappers from Panama at the Costco in the Teterboro Landing Shopping Center, 2 Teterboro Landing Drive; wrapped them in foil with sweet peppers, garlic, onions, tomatoes and seasonings, and baked them for 1 hour. Delicious.


At Wegmans in Montvale


The opening of an enormous Wegmans supermarket in Montvale last September was a non-event to me and other residents of Hackensack nearly 16 miles away.

The company, based in Rochester, N.Y., dragged its feet for years on opening in Bergen County, then picked a town on the far-off New York State border.

Last Thursday, when me and my son were returning home from Bear Mountain State Park in New York State, I stopped in and picked up a few things. 

I didn't see any reason to make a special return trip, though.


TOO BIG FOR MY TASTE: In the produce section, I strained to see the back of the store.
COMPARED TO COSTCO: I could save 22 cents if I bought 3 pounds of organic bananas at Wegmans in Montvale instead of at Costco Wholesale in Teterboro, where they are $1.99.
SPARKLING WATER: I found a good deal on a dozen naturally flavored cans of seltzer for $2.50 with a Shoppers Club Card. I bought 4 packs for $10, but avoided Blackberry Tangerine and Coconut Lime.
TOO SWEET: A 6-ounce container of Wegmans Fruit On The Bottom Lowfat Yogurt contains 32 grams or nearly 8 teaspoons of natural and added sugars. I passed.
GOES ON AND ON: This photo shows the center section of Wegmans; there are large wings on each side. We spent about 30 minutes there, but never saw the fresh seafood department. The supermarket is at 100 Farm View, Montvale. Open 7 days from 6 a.m. to midnight.

Fresh wild salmon lands at Teterboro Costco: Try it with tomatoes, fresh herbs

Two and a half weeks after Alaska's Copper River opened for the season, fillets of fresh wild sockeye salmon went on sale today at Costco Wholesale in Teterboro.

If the past is any guide, the Teterboro Costco will offer fresh wild sockeye, coho and king salmon from the United States and Canada until October.

That's roughly four months of enjoying one of the world's greatest fish for eating.

I bought a 1.7 pound skin-on sockeye salmon fillet ($16.99 a pound), added a little sea salt and cooked seven serving pieces on a preheated stove-top grill over a medium-high flame for a total of eight minutes, turning them once.

I topped the fish with a reduction of organic diced tomatoes, red wine, lemon juice and seasonings, and threw on chopped fresh mint, oregano and rosemary from my garden.

Just outstanding. As good as I remember from last year. As the weeks go by, the price of fresh wild salmon is expected to go down to around $10 a pound.

The sockeye I bought today in Teterboro was $2 more a pound than at a Costco in Alaska last week.




My stove-top grill straddles two gas burners, and I use spray oil before adding the fish skin-side down.
Other wild fish offered at Costco today included, clockwise from top, Icelandic Cod ($7.99 a pound), Ahi Tuna ($13.99 a pound), Monk Fish ($9.99 a pound) and Pacific Halibut ($19.99 a pound), not shown.
Quick-cooking fresh wild Ocean Perch fillets ($5.49 a pound) also were available at the Teterboro warehouse.

Two of the instant coupons available to Costco members in Teterboro until June 25 are $2.30 off on two 40-ounce jars of Victoria White Linen Marinara (about $3.25 a jar), above, and $4 off Dannon Oikos no-fat Blended Greek Yogurt, which has only 6 grams of sugar per 5.3-ounce container. That's 18 containers for $8.99 or about 50 cents each.
DETAILS: The Costco Wholesale at 2 Teterboro Landing Drive, in the Teterboro Landing Shopping Center off Route 46, is open 7 days. Weekday hours are 10 a.m. to 8:30 p.m. You don't have to be a member to use the Costco Gas Station in Teterboro.

Eating Out + Eating In: Tacos with sides, Costco's fresh fish case gets a little wilder

The appeal of hand-held food is universal, but I'm not about to promote the mystery meat in the vast majority of hot dogs and hamburgers.

In fact, my ideal is the Mexican-style fish taco, preferably made with a fresh, wild-caught fillet; chopped cilantro and onion; and a couple of spicy salsas to add between bites.

On Tuesday, I met my friend Arthur for lunch at Rosa Mexicano, the fine-dining restaurant in Hackensack where just about everything is made from scratch.

That includes scrumptious handmade corn tortillas formed, pressed and grilled in the beautiful dining room.

Fish tacos

Rosa Mexicano serves a deluxe version of the basic fish taco, Pescado de Mahi Mahi, three tacos stuffed with grilled white fish, white cabbage escabeche and jalapeno-tartar sauce ($15).

But that's not all. You also get three sides: A cheesy corn salad, achiote rice and black beans, all of which I took home.

The Baja-style tacos were delicious and filling, but next time, I'll ask the kitchen to make each taco with two corn tortillas instead of one.

And they are a better deal (and come without the side dishes) when ordered as part of the Chef's Lunch, two courses for $20 served Mondays to Fridays.

On the Chef's Lunch menu, look for Baja Fish Tacos, which are made with beer-battered and fried seasonal fish, though I imagine you can still get them with grilled fish.




My friend Arthur ordered the two-course lunch for $20, starting with a Mexican Passion Fruit Shrimp Cocktail (shrimp, avocado, tomato, onions, cucumber, cilantro and passion-fruit cocktail sauce), above. His second course was a large Ensalada de Waldorf, a Mexican take on an American classic (apples, seasonal fruit, raisins, candied pepitas, marinated chicken and crema agave dressing), and he took most of it home to finish at dinner.
A generous serving of complimentary corn chips and salsa were addictive.
Handmade corn tortillas are formed, pressed and grilled in the dining room, which is filled with Mexican pottery, textiles and sconces, below.

Fresh, wild Ocean Perch was only $5.49 a pound at Costco Wholesale in Teterboro this week. At home, I poured most of a 16-ounce jar of 365 Everyday Value Roasted Salsa Verde from Whole Foods Market into a pan; added sliced onion, garlic and lemon juice; and brought the mixture to a boil before adding the small skin-on fillets, and covering the pan. The fish poached in 5 minutes.
A pan of Costco's fresh wild Monk Fish prepared with fresh spinach, tomatoes, pitted black olives, capers, grated cheese, fresh herbs and fresh lemon juice. When cooked (20 minutes in a preheated 400-degree oven), monk fish puffs up and has the texture of lobster.

At Costco, a wilder fish case

In May, Costco Wholesale members in Teterboro were surprised and delighted to find fresh wild Monk Fish fillets in a refrigerated case that usually contains only wild cod, haddock and flounder.

This week, instead of Monk Fish, my wife found shrink-wrapped trays of fresh wild Ocean Perch, also called Red Fish.

And it looks like the Ocean Perch and Monk Fish are the consolation prizes as this year's fresh wild Alaskan salmon season is getting off to a rough start, just as it did last year.

Sockeye Salmon from Alaska's Copper River usually shows up in Costco warehouses in late May or early June, but the catch is far below last season's.

Lyle French, the fresh-seafood buyer at Costco headquarters in Issaquah, Wash., said he was able to send some Copper River sockeye fillets to warehouses on the West Coast and in Virginia.

He couldn't predict when fresh wild sockeye salmon will arrive in New Jersey.

On Costco's Facebook page today, one member in Michigan posted a video of fresh wild sockeye salmon from the Copper River that was selling for $16.99 a pound.

The season opened on May 18 at the Copper River.
